Spicy and Sweet Galbijjim Recipe – 3 servings:

Ingredients:
– 2 pounds beef short ribs
– 1 onion, sliced
– 4 garlic cloves, minced
– 2 carrots, cut into chunks
– 2 potatoes, peeled and cut into chunks
– 2 green onions, chopped
– 1 tablespoon sesame oil
– 2 tablespoons soy sauce
– 1 tablespoon gochujang (Korean chili paste)
– 3 tablespoons brown sugar
– 1 cup beef broth
– 1 tablespoon toasted sesame seeds for garnish

Cooking sequence:
1. Soak the beef short ribs in cold water for 30 minutes to remove blood. Drain and set aside.
2. Heat sesame oil in a large pot over medium heat. Add sliced onion and minced garlic, sauté until fragrant.
3. In a small bowl, mix soy sauce, gochujang, and brown sugar to create a sauce.
4. Add beef short ribs to the pot, lightly brown them on both sides.
5. Pour the sauce mixture over the ribs, coating them evenly.
6. Add beef broth to the pot, covering the ribs. Bring it to a boil, then reduce heat and simmer for about 1.5 hours or until the meat is tender.
7. Add carrots and potatoes to the pot, simmer for an additional 20 minutes or until they are cooked through.
8. Remove from heat and sprinkle with chopped green onions and toasted sesame seeds for garnish.
9. Serve hot with steamed rice or noodles.
