Ingredients:
– 2 cups cooked rice
– 1 cup kimchi, chopped
– 1 cup vegetables (carrots, peas, corn), diced
– 1/2 cup onion, diced
– 2 cloves garlic, minced
– 2 tablespoons vegetable oil
– 2 tablespoons gochujang (Korean chili paste)
– 1 tablespoon soy sauce
– 1 teaspoon sesame oil
– 4 eggs
– 2 green onions, chopped
– Salt and pepper to taste

Instructions:
1. Heat vegetable oil in a large pan or wok over medium heat.
2. Add onions and garlic to the pan, sauté until onions become translucent.
3. Stir in the chopped kimchi along with its juice. Cook for 2-3 minutes to enhance the flavors.
4. Add vegetables to the pan and stir-fry for another 2-3 minutes until they are tender.
5. Push the kimchi mixture to one side of the pan and crack the eggs into the open space. Scramble them until cooked.
6. Add the cooked rice to the pan and mix well with the kimchi mixture, breaking up any clumps.
7. In a small bowl, combine gochujang, soy sauce, and sesame oil. Pour this sauce over the rice mixture and stir to ensure even coating.
8. Season with salt and pepper according to taste, keeping in mind that kimchi already contains salt.
9. Cook the fried rice for an additional 3-5 minutes, stirring occasionally to prevent sticking.
10. Once the rice is heated through and well blended, remove from heat.
11. Divide the fried rice into four serving bowls.
12. Garnish each bowl with chopped green onions for freshness and additional flavor.
13. Serve the spicy kimchi fried rice hot, optionally with a fried egg on top.
