Sour and Spicy Kimchi Soup Recipe:

Ingredients:
– 2 cups vegetable broth
– 1 cup kimchi, chopped
– 1/2 cup kimchi brine (liquid from the kimchi jar)
– 1/2 cup tofu, cubed
– 1/4 cup shiitake mushrooms, sliced
– 2 garlic cloves, minced
– 1 tablespoon gochujang (Korean red chili paste)
– 1 teaspoon sesame oil
– 1 teaspoon soy sauce
– 1 green onion, chopped (for garnish)
– Salt and pepper to taste

Instructions:
1. Heat a pot over medium heat and add the sesame oil.
2. Add minced garlic to the pot and sauté for a minute until fragrant.
3. Add the chopped kimchi, kimchi brine, and gochujang into the pot. Stir well to combine.
4. Cook for about 2-3 minutes until the kimchi softens slightly and flavors blend together.
5. Pour in the vegetable broth and bring the mixture to a boil.
6. Reduce the heat to low and simmer for 10 minutes to let the flavors develop.
7. Add the cubed tofu and sliced shiitake mushrooms to the pot.
8. Continue to simmer for another 5 minutes until the tofu is heated through.
9. Taste and season with salt and pepper as desired.
10. Remove from heat and ladle the soup into bowls.
11. Garnish with chopped green onions and serve hot.
